Tomato Jam Recipe
2 LB Roma Tomatoes cored and seeded
½ C Sugar
3T Apple Cider Vinegar
¼ t Smoked Paprika
¼ t Hungarian Paprika
½ Lemon
Salt and Pepper to taste
Chop tomatoes and toss with sugar in sauce pan. Let sit for 10 minutes. Bring to a boil over medium heat and cook for 10 minutes. Add cider vinegar and both paprika. Lower heat and simmer for 10-15 minutes, or until mixture becomes jammy and thick. Finish with salt, pepper and squeeze of lemon.
